I poached the eggs in quite a bit of water with only 1/4 bottle of wine...perhaps that's why? Some recipes call for poaching the eggs in the liquid that will eventually be the sauce; that's probably the reason for the blue color.

We are saved!!!!! We called Le Canut & Les Gones the resto we will dine at Thursday evening up in Croix Rousse.... ( ok,,, Cedric called and asked, I was too timid ) and lo and behold.... there are some REAL DEALS left in the world... a good thing, non, during these times? We were told... tout est fait a la maison! We ate there once before and had an excellent meal earlier this spring.... can't wait till tomorrow evening!
